IRANIAN BARBERRY RICE WITH CHICKEN
Zereshk polo morgh is one of the most famous dishes in Persian cuisine. It’s full of wonderful flavors such as saffron, turmeric and barberry.
Many of you have raved about our Persian recipes and have tried so many of them. Some of our popular Persian recipes are Mirza ghasemi, Persian rice and tahdig and of course, ghormeh sabzi. 


INGREDIENTS:

*Step One Making the Saffron Water:

1 teaspoon Saffron 
A pinch of Sugar
5 tablespoons Boiling hot water

*Step Two Making the Chicken:

5-6 pieces Chicken thighs
Water (as you needed)
1 tablespoon Salt
2 tablespoons Butter
1 large Onion (chopped)
2 Garlic (chopped)
2 large Tomatoes (grated)
1 tablespoon Tomato paste
1/2 teaspoon Turmeric powder
1/2 teaspoon Coriander powder
1/2 teaspoon Paprika powder
Salt to taste
Water (as needed)
3 tablespoons Saffron water 

*Step Three Making the Rice:

3 cups Basmati Rice (washed and soaked for 1 hour)
4 litres Boiling water
1 tablespoon Salt
1/2 cup Rice water (collect from the pot while cooking the rice)
3 tablespoons Oil
1/4 cup Oil
1 cup Barberries (clean and washed)
3 tablespoons Butter
2 tablespoons Sugar
3 tablespoons Saffron

Ingredients

Liquid Saffron:
4-5 threads of saffron finely ground
1-2 ice cubes
Tomato Paste Sauce:
1 tbsp oil
1/2 tsp turmeric
1/2 tsp salt
1/2 tsp pepper
3 tbp tomato paste
1 - 1/2 cup water
Chicken:
2 tbsp oil
1/2 tsp butter
5 pieces chicken thighs
1 tsp salt
1 tsp pepper
1 tbsp liquid saffron
Veggies:
1 onion sliced
1 bell pepper cut into chunks
2 carrots sliced
1 tbsp liquid saffron
Barberries:
3 tbsp barberries
1 tbsp water
1 tbsp oil
1 tbsp sugar
2 tsp liquid saffron
To serve:
2 times the recipe of Persian Style Rice on the blog
